Oh Lord, Have Mercy.....

These are SO Amazingly Good - You seriously have to make them, Right NOW....Trust me!


An alternative to S'MORES......


Stick a toothpick in the marshmallow and dip into melted chocolate.  Roll them around in crushed up graham cracker crumbs.  Place on wax paper and chill for about an hour.  Then, try to contain yourself from devouring the whole platter full.


*I didn't think of this until this morning, but wouldn't these be even better if you used a small mini stick pretzel instead of the toothpick? Mmmm, I think so! Note to self: Next time use the pretzels Yum-o!

Learning About Buses (stART project)

Nathan has been going to Kindergarten Club this summer.  It's a program that helps kids get ready for kindergarten.  They do all kinds of neat things and themes.  I should know, as I have gone through the program several times now LOL! This week they learned about bus safety. They also went on a bus ride.  Nathan said the same thing all my other children have said "there isn't any seat belts on here...."

Going along with the theme, we went to the library in search of bus books.  We ended up borrowing two.  Bus Stop, Bus Go by Daniel Kirk and School Bus by Donald Crews.  And we made a school bus craft.  As busy as we have been the last few weeks, I kept this one as simple as possible.  Especially since he did another bus craft at Kindergarten Club and received several print outs from the bus safety teachers/drivers. 

We also learned some more about shapes with our project.  Buses are rectangles and wheels are circles, etc.  We cut out a big rectangle for the bus and some circles for the wheels, some squares for the windows and glued them all to a piece of construction paper.  Then Nathan drew people in the windows.  He also remembered that school buses have a stop sign on them, so he drew one on his bus.  And asked me to write "stop" on it. 

He was feeling pretty cranky today from all the activity he's been doing lately (K.C. and library story time) that I thought it was best to keep it simple.  Plus, we did the Cupcake book earlier this week too, so I figured he's getting plenty of stimulation.

Cute Children's Book - Cupcake


I Love cupcakes, so when I saw this cute little book at the library called Cupcake by Charise Mericle Harper, I had to take a peek.  I have to say it is such a cute little book.  It's about this plain ol' Vanilla cupcake with fancy brother and sister cupcakes (Rainbow-Sprinkles, Chocolaty Chocolate, Pink Princess, Polka Dot, etc.).   But when they all get picked and he doesn't, he feels lonely.  Along comes Candle. 

Candle tells Cupcake that he knows exactly how it feels being left out, since all his fancy brothers and sisters (Number Candle, Stripy Candle, Twisty Candle, Super-Long Candle, etc.) were picked too, leaving him behind, alone as well.  Candle decides that the only thing Cupcake is missing, that would make him feel special is a cool topping.  So he sets off in search of a special topping to help cheer up Cupcake.  He brings back pickles and spaghetti and peas and even a squirrel, which leaves a nut on top of Cupcake's head.

Candle jumps up on Cupcake's head to remove the nut and it appears that they finally discover that they are perfectly matched...when Candle declares that the next day they should try...a potato...LOL!

At the end of the book there are recipes for both Plain Vanilla Cupcakes and Plain Buttercream Frosting.  Nathan and I had fun making them and even though I have shelf in my cupboard filled with colored sugar, sprinkles, and nonpareils - we left the cupcakes plain, white and ordinary, just like Cupcake.

My Recipe for Chicken Pasta Primavera


Ingredients:
1 1/2 pound chicken breasts cut up in bite size pieces
2 cloves of garlic, minced
Olive Oil

*Roughly Measured*
1 small zucchini (or about a cup) cut into strips
1 cup of fresh cut broccoli
1 cup of fresh cut cauliflower
1 cup of carrots cut into strips

1 box of Farfelle pasta (bowties) - you can use half the box if you have a smaller family or the whole box, if you want leftovers.
2 1/2 cups heavy whipping cream
2  1/2 cups Parmesan cheese
salt
pepper

*You can cut back all the ingredients if you need to.  If you want to cut back the cream and cheese, you can cut it back to 1 1/2 cups or even less (for half a box of pasta).  I like my pasta to stay creamy, so I add the whole amount.  You can also add whatever vegetables or pasta you like (peppers, etc.)  This recipe is pretty adaptable.  I hope everyone can understand what I'm saying...it's hard when you don't measure things and then try to write it down for other people to follow.


Directions:
In a large skillet cook the chicken and garlic in the olive oil, until the chicken is no longer pink.  When it's done cooking, add the vegetables and cook over medium low heat until the veggies are tender.

While that is cooking, make the pasta.

Add the cream to the chicken and veggies when the vegetables are tender.  Cook and stir until the pasta is done (drain the pasta).  Add the pasta to the chicken and vegetable mix.  Stir in Parmesan cheese and add salt and pepper to taste.
