What's That You Say.....It's National S'Mores Day

I made these bad boys and they were delish!


S'Mores Cupcakes

For the cupcakes

1 box yellow cake mix
1 cup crushed graham crackers
1 bag Nestle chocolate chunks

Heat oven to 350*
Mix cake mix according to package directions...Fold in graham cracker crumbs and chocolate chunks.
Fill cupcake liners....Bake 18-23 - mine took a little longer (25 mins instead).
Cool for about 10 mins and remove from the pans.
Then cool another 30 mins more before frosting.

For the frosting

1 jar (7oz) marshmallow creme
1 stick butter, softened
2 cups powdered milk
1-2 tsps milk

Soften the creme in the microwave for about 15 secs.
Beat creme, butter and powdered sugar on low speed til blended. Beat in milk a tsp at a time to make frosting spreadable.


**Notes: I wasn't happy with the way the frosting came out. It was a little runny, maybe try hardening in the fridge first before spreading or only add 1 tsp of milk. Or maybe try melting a large marshmallow and placing that on top instead of the frosting.    I refrigerated them to help "set" the frosting.
