Yummy Banana Pudding Cupcakes

Words simply cannot describe how awesome these were . . . . .



Ingredients:

1 box vanilla cake mix
1 box instant banana cream pudding (3.4 oz)
3 Eggs
1/2 cup vegetable oil
1/2 cup water
10 oz  Philadelphia's Original Cooking Creme
1 cup bananas, smashed
2 cups  Nilla Wafers, crushed
8 oz Cool Whip, thawed

Directions:

Preheat oven to 350 degrees.

In a large bowl, mix together the cake mix, pudding (dry), eggs, oil, water and the cooking creme.

Mix until all of the ingredients are well combined

Fold in the bananas and crushed Nilla wafers.

Bake cupcakes for 18-20 minutes.

Place cupcakes on a cookie tray and cool them in the freezer for about 10 mins. 

Spread Cool Whip on top and add a Nilla wafer for garnish.

Keep refrigerated.



These babies will disappear before your very eyes.

Moms That Blog (The Interviews)

Introducing......Amie - She's a stay at home mother of three, who loves to design and create custom children's decor.   Not only does she love sharing her own designs, but those of other's as well with a weekly  link party.  Just recently, she celebrated her first year blogiversary.


Tell us a bit about yourself.......I met my husband when I was 19 and we got married at 22 and bought a house and had a baby all within that first year.   We both grew up in NJ and have lived here all of our lives except for a short stint in NC a few years ago.  We have three crazy, rambunctious kids, 1 girl and 2 boys...who are 8,6 and 4.  They keep me Super busy!  


Name 3 things we might be surprised to learn about you.......
1.  I am not a Breakfast person.. it takes me about an hour after I get up to be able to eat and most mornings I drink my coffee and then have a smoothie or some kind of baked yummy. 
2.  I am INSANE when it comes to exercise.  It is one of my many passions in life.  I love running and hot yoga and I am a certified SPIN instructor!
3.  I am a Horrible sleeper.. ever since I had my kids I have been unable to sleep through an entire night.  Most nights I go to be around 10 but I am up again between the hours of 2 a.m. and 4 a.m.


When did you first start blogging.......I started blogging because a friend of mine thought that it would be a great way to get my business name out there for custom children's decor.


What is your blog about........My blog is about everything!  The silliness that goes on in my house, my crafty projects, upcycled objects and of course some of our favorite recipes!


Why do you blog........Blogging is my crafty motivation!  It keeps me busy and I just love to share my ideas and tutorials with others.  It's a great creative outlet but with an audience!


Must read blogs that you visit daily......There are sooo many awesome blogs out there that it's hard to pick and choose my favorites.. I have a very large list of blogs that I follow.. most of which are craft or Mommy related.


What inspires you......I am always inspired by my kids!  They have such wonderful imaginations and are always sooo busy and full of wonder that they inspire me to look at the world from a different perspective.




Do you have a bucket list......I don't really have a bucket list per say.. but my current goals are

1. To be able run a full marathon by the time my little guy is in Kindergarten.. (I have currently done a half and am planning to do another in September)
2. To go on a vacation ALONE with my husband for the first time in 10 years.
3. To take a cruise and get over my fear of boats
4. To learn a foreign language


Do you have any blogging advice that you would like to share........I don't have much blogging advice to give other than be honest and be yourself!  Followers are fun to have but don't get caught up in the numbers.. I'd rather have a few hardcore fans to listen and interact with than 700 who don't really care.

I Ain't Gonna Paint No More


The book we chose this week was called I Ain't Gonna Paint No More by Karen Beaumont.  This fun whimsical  book set to verse was amusing and quite colorful.  After a small boy paints the ceiling, carpets and walls, his mother puts him in the bath tub and hides the paint.  The little boy spies his mother's hiding place and against his better judgement decides to paint a few more things, namely himself.  Each time, he declares "I ain't gonna paint no more, no more....Still, I just can't rest til I paint my chest...I ain't gonna paint no more."  Soon enough the paint is all gone and the boy is right back in the tub.


Last summer, the kids and I made sidewalk paint for an awesome summer project and I remembered the kids had more fun painting each other's feet and legs than they did the driveway.  So, I knew this would be the perfect activity go along with this book.  Sidewalk paint is inexpensive to make and provides hours of fun for little ones (or creative teenagers like Sarah and Zachary).


 All you need is cornstarch, water and food coloring (equal parts cornstarch and water and a few drops of food coloring).  We used foam brushes that I purchased at Dollar General...12 of them in various sizes for under 2 bucks.

Field Trip Fridays


I decided that since we weren't really going on vacation this year that I would plan some fun day trips around the area that we live.  Nothing expensive (although there are plenty of attractions like zoos, theme parks, museums, etc...in the surrounding areas), I just wanted to do some good old fashioned exploring with my kids.  Places that were free or cheap and things we have never done before.  I actually took the kids to our destination on Wednesday, so that I could post about it today.  I thought it would be a great idea if we went to at least one place each week and explored our countryside and shared it with all of you.

This week we went to.....Cooper's Rock, WV.  This gorgeous state forest is actually only 45 minutes from our house.

"Coopers Rock State Forest gets its name from a legend about a fugitive who hid from the law near what is now the overlook. A cooper by trade, he resumed making barrels at his new mountain hideout, selling them to people in nearby communities. He lived and worked in the forest for many years.  

During the Depression, between 1936 and 1942, the Civilian Conservation Corps (CCC) built numerous structures in the forest, often using durable American chestnut wood from trees that succumbed to a blight that nearly wiped out the species. Eleven of these structures, including the rustic picnic shelters near the overlook, have been included on the National Register of Historic Places.

Bands of rockcliffs line the Cheat River Gorge and provide numerous overlooks. The centerpiece among these is the main overlook, which furnishes a panorama of the gorge and distant horizons. A maze of enormous boulders and cliffs fascinates hikers, and the trails are especially lovely in June when the rhododendron and mountain laurel are in bloom. Several trails wind through forest valleys and over ridges, and a number of creeks beckon the explorer. Glade Run is dammed to form a 6-acre pond that is regularly stocked with trout. The observant hiker can hear and sometimes see squirrels, chipmunks, hawks, owls, turkeys, turkey vulture, songbirds, fox and deer throughout the forest."




The big attraction (other than "Rock City") is the scenic overlook.  And let me tell you, it does not disappoint. The view is amazing...God's country is beautiful.  


The kids had a blast exploring the caves that the huge rocks and boulders had formed.  They "rock climbed" and ran through the trees, while I was screaming for them to come back and texting them to stop running off....some "family adventure", eh? LOL! The older boys probably had the most fun, not only because they could climb the rocks, but they kept trying to run ahead of us and doubling back to scare us from behind.  Only, Zach forgot to set his phone to vibrate and we could hear it beep every time I texted him haha.








Cooper's Rock has a campground, several picnic areas, pavilions, a fishing area, lots of hiking trails (from easy to difficult) and it's close to Cheat Lake (for swimming and boating).






We had a lot of fun exploring our way through the woods and rocks.  A few of the kids were bored (you can guess which ones) and a few of them didn't want to leave (again, guess who)...all in all a fun, family adventure that we will definitely do again someday.

And what family adventure is complete without a stop at the playground.  There are several play areas throughout the park.  We actually found an old swing set in the middle of the woods. 






And as with any family....somebody always has to get hurt

(watching them climb around on those huge rocks - I had visions of broken limbs running through my mind. So I'll take a little scratch or two).
