Ingredients:
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups butterscotch chips
1/2 cup chopped walnuts (optional)
Directions:
Heat oven to 350 degrees.
Dump all the ingredients (except the chips and nuts) into a large bowl.
Don't you just love the word "dump" when it refers to a recipe? LOL!
Mix ingredients well.
Stir in chips and nuts.
Drop by teaspoon onto greased cookie sheet and bake for about 10-12 minutes or until lightly brown.
