St. Paddy's Day Wrap Up

We had quite the day here at our house.  We didn't get to do everything I had planned to do, due to unforeseen circumstances, but I did manage to accomplish a few things to help make the day somewhat festive.  Plus. there's always next year, Right?

My Psychedelic Rainbow Cake (not my recipe)

This cake came out FANTASTIC....the kids loved it and it looks totally awesome!! Definitely goes in the "do again" file!! I'm kinda of proud of myself for this one :D and I got to impress the kids (and Rich). All the younger kids want this to be their birthday cake from now on!






Tradional Irish Soda Bread

I have never made this before and I'll tell you, it was very yummy! The kids liked it, even the ones that don't like raisins liked it.  Might just have to bake this bread every year!


Corned Beef and Cabbage

To be honest, this wasn't the greatest thing I made...the potatoes and cabbage needed to cook alittle bit longer, I think I was trying to rush dinner and just didn't give it as much attention as I should have.....Oops, lesson learned.  I think when I "re-heat" it as leftovers it'll come out better, or at least I hope.  Oh well, can't win 'em all, I guess. 
The Irish magnets the boys did the other day. They turned out great and they are stylin' on Daddy's beverage fridge:)

And the strung up ones (a temporary set up) since all the St. Patrick's Day decorations will be coming down to make way for the Easter ones).

I tried to make the day fun, despite all the crap that was going on (and still happening), but that's life.  You deal with what it throws at you, even if you don't like it or don't want to mess with it.
