Tonight's Dinner.....

Homemade Chicken Cordon Bleu...Buttered Parsley New Potatoes and Green Beans

Man, not to toot my own horn or anything, but this was absolutely amazing and despite it sounding complicated to make, it was actually pretty easy (but don't tell my family that...they all think I slave away when I'm making dinner hehee). 

Here's what I did.....

Take some boneless, skinless chicken breasts (however many you need), and pound the hell out of them with a meat tenderizer until they are flattened out.  Then sprinkle each side with some salt and pepper.  Lay one slice of ham and one slice of swiss cheese on top and roll it up, secure with a toothpick.  Then dip the chicken in a beaten egg.  Then dip it (both sides) in some Italian bread crumbs....what's an Italian household without olive oil and bread crumbs, huh? hahaha

Place them in a baking/casserole dish.  Bake at 350* for about 45 minutes, or til they are no longer pink inside.  You can check them around 35 minutes or so, but I'm a stickler for making sure chicken is cooked all the way through, so I added an extra 10 mins or so.  I cut them in half to feed the kids, because I didn't think they could eat a whole one, but Anthony and Zach both wanted extra...Anthony even asked to have seconds of the chicken instead of dessert :D

Talk about delicious!!

Yay for your new stove!!! You've been cooking so many yummy recipes lately Charlene! I think you should do a post about your grocery budget... how on earth do you feed all those kids??

I know Kristy, it is overwhelming trying to post/comment on all the blogs. I have a hard time keeping up...I have been loving all the money saving coupons blogs that I found on here though. I saved over 60 dollars at the store with sales and coupons. It's not as great as some people can do, but for me, it felt great. Have a good night!
